1709

First date written on a stone slab. We don’t know what it refers to.

1945

Mr Henri Wüthrich, butcher in St-Ursanne, buys the Hôtel du Boeuf from Mr Xavier
Marchand, Member of the Bernese Grand Council and Director of the St-Ursanne Retirement Home.

1951

Transformation of the ground floor, which was previously a stable, into a restaurant
with a staircase made of stone and reinforced concrete. In the other part, a barn and a servant’s room are converted into a butcher shop, which became the Wüthrich butcher shop up until 1994.

1945 – 1963

The establishment is run by Mrs and Mr Noirjean, who will later take over the Buffet de
la Gare in La Chaux de Fond.

1963 – 1967

The establishment is run by Mrs and Mr Berset.

1967

From Easter to December 1967, the establishment was temporarily run by Mrs and Mr
Gaby and Jean Wüthrich until new tenants were found.

1967 – 1970

The establishment is run by Mr Wasser.

1970 – 1976

The establishment is run by Mrs and Mr Feune.

1976 – 1977

The establishment is run by Mr Piquerez.

1977 – 1980

The establishment is run by Mrs and Mr Girod.

1980 – 1985

The establishment is run by Mr Jean-François Meyer.

1987

The establishment is run by Mrs Léa Bamert.

1989

In December, the Maillat family settles on the banks of the Doubs.

1990

Opening of the establishment by Claudine and Jean-Pierre Maillat.

1992

Construction of the hotel rooms on the top floor of the building.

1995

Renovation and expansion of the restaurant with the removal of the butcher shop and the construction of the wooden staircase.

2005

Renovation and extension of the kitchen in collaboration with Hugentobler.

2007

Renovation of the hallway on the first floor.

2008

Construction of the terrace in front of the Coop shop, as designed by Yann Kummer, Yann agency.

2010

First renovation of the hotel rooms.

2017

Second stage of the renovation of the hotel rooms.

2019

Complete renovation of the flat of the owners.
